Quince is a bitter raw fruit, however, it is transformed into a delightful fruit vinegar by squeezing the juice from the fruit.  It is then fermented with natural yeast and placed into oak barrels with the mother from vinegar for a period of about twelve to fifteen months.  The delicate aroma is perfect for delicate type fish, shrimp or scallops.  You can make a fruit salad and drizzle it over for a delicious treat.
