How  Balsamic Vinegar is Made

Tradizionale or Traditional Balsamic Vinegar means that the aging process is a minimum of twelve years.  Tradizionale-Affinato translated means this meets the minimum maturing process; while Tradizionale Extra Vecchio has an aging process in the range of twenty-five years or more.   What is so exciting about this product is the age of the company.  Over 400 years, using the same barrels.  Imagine that those barrels could have been a witness to history, the so-called middle ages. The  "Musto" (have to read my article), of today, meets the the history of previous batteries of balsamic vinegar.

This product meets or exceeds the d.o.p. standards having been approved by a team of five testers.  The consistency is like honey and is used in a variety of ways.  The Culinary Counsellor particularly craves this on vanilla ice cream, while some may prefer strawberries, or other fruits; while others prefer it on cheese.  As a glaze, use it on meats, pork or seafood.
